FERMENTATION
Fermentation is the metabolic process where mycelium converts the feedstocks into cellular biomass and metabolites in a bioreactor under controlled conditions.
FEEDSTOCK
Agri-food waste and/or side stream taken from an intermediate or end point in food and/or feed processing. They are used as input in the fermentation process.
MYCELIA
Fungal biomass consisting of a network of branched, thread-like filaments. Mycelia is the product of fungal fermentation, which is harvested from the bioreactors.
MYCOPROTEIN
Mycoprotein is protein derived from fungi either from dewatered mycelia or extracted from mycelia.
CASCADING
In a cascading approach, a number of different target components are sequentially extracted in order to maximise output from a given biomass.
METABOLITES
Small molecules generated in various biochemical processes including during growth of mycelia. Some metabolites can be detected with analytical tools such as NMR spectroscopy or mass spectrometry (MS), and can provide a better control of the fermentation process.
MACHINE LEARNING-BASED MODELING
The process of using artificial intelligence (AI) to build and improve system models autonomously with the data gathered from e.g. a fermentation process. These models can be used as the basis
