We commemorate World Energy Day on February 14th, a worldwide campaign to increase awareness of the resource’s significance in our everyday lives and the necessity for responsible and effective energy resource production and usage. Thanks to projects like ZEST, supported by the Circular Bio-based Europe Joint Undertaking, fungi, nature’s unsung heroes, are stepping into the spotlight of bioeconomy.
These remarkable organisms, with their incredible adaptability and vast biodiversity, hold the key to solving some of the most pressing challenges of our time. From sustainable agriculture to biodegradable materials and revolutionary medicines, fungi are transforming how we think about innovation and sustainability.
Why fungi matter now more than ever
Fungi provide an environmentally friendly, nature-inspired route to innovation as we confront the problems of resource scarcity and climate change. They are many, varied, and have the ability to substitute environmentally benign methods for destructive industrial processes. Our project dives deep into the fascinating world of fungi to unlock their potential across various fields and aims at the following principal objectives:
- Develop an innovative fermentation system for producing fungal proteins and nutrients for food and pet food products, as well as other bio-based products like cosmetics.
- Utilise digital modelling and artificial intelligence for process optimisation and creating a zero-waste production system.
- Assess the entire value chain to ascertain their economic viability, market potential, environmental impact, and sustainability of fungal-based products.
