ZEST brings alternative proteins to Denmark’s largest food festival

Partners Danish Technological Institute (DTI) and Food & Bio Cluster Denmark (FBCD) showcased the project at Food Festival 2026.

ZEST’s Danish partners, the Danish Technological Institute (DTI) and Food & Bio Cluster Denmark (FBCD), presented the project at Food Festival 2026, Denmark’s largest food festival, held from 4 to 6 September at Tangkrogen in Aarhus.

Over three days, Food Festival brought together consumers, food professionals, producers, companies, associations and organisations to explore new trends, products and approaches shaping the future of food. The event welcomed more than 27,000 visitors and brought together around 250 companies, producers, associations and organisations.

Across ten different festival areas, the 2026 programme offered hundreds of activities, including tastings, workshops, talks, live cooking demonstrations and competitions. Against this backdrop, DTI and FBCD hosted an informative stand where visitors had the opportunity to discover ZEST’s mission, vision and objectives and learn more about how the project is contributing to the development of sustainable alternative protein solutions.

The festival provided the Danish partners with an opportunity to bring ZEST closer to both the general public and food-sector stakeholders, raising awareness of fungal fermentation and its latest findings.

ZEST and BRILIAN: it’s a match!

ZEST shared the exhibition space with its sister project BRILIAN, another European initiative working to advance the circular bioeconomy. BRILIAN aims to promote sustainable and cooperative business models in rural areas by putting primary producers at the centre of new bio-based value chains.

Bringing both EU-funded initiatives together at Food Festival offered visitors complementary perspectives on how European research and innovation can contribute to a more circular, sustainable and competitive bioeconomy.
